Feliz Cinco de Mayo!

From what I understand, Cinco de Mayo is a bigger deal in the U.S. than it is in Mexico as far as the fiesta goes.  Aside from loving an excuse to eat my face off on tortilla chips, white dip, and drink Dos Equis, I really do love celebrating other cultures and their heritage.  I enjoy learning about why people act or dress a certain way.  So many different influences all, well, infused in the U.S. Did you know that in Arizona they have chihuahua races to celebrate Cinco de Mayo?!  They crown a king and queen!  It looks like it's starting to spread because they had one in Dewey Beach this year (yesterday, May 4th) to benefit the Beach Patrol.  Look at little Chloe below!

Maybe I should sign Coop up for next year!  I made the dogs their own little Cinco de Mayo treat to celebrate.

**Disclaimer** - I am not a doggie dietician or vet, so please be mindful of any allergies that your pet may have.  I use ingredients that are known to be safe for dogs to ingest, but just like humans, there is a chance that your dog could be allergic or end up with a case of killer squirts.  Please be mindful and monitor your dog(s) whenever changing or introducing new eats.

Mango and Chicken Tostada
Makes about 5 Tostadas
Ingredients:

Tortillas
2/3 Cup Rice Flour 
1/4 tsp Baking Powder
1 tsp of No Sugar/Natural Applesauce
3 Tbsp Water

Other Ingredients
5 Tbsp Boiled, Shredded Chicken
5 Tbsp Cubed Mango
5 tsp Plain Yogurt (optional)

Directions:

1.  Mix together flour and baking powder in a bowl.  Cut in applesauce.

2.  Add water until a dough forms.  It's about the consistency of play dough.  Cover with a damp paper towel and let it rest for about 15 minutes.

3. Take approximately a tablespoon of dough and roll it into a circle about 4 inches in diameter (about the thickness of a pie crust).

4.  Cook on each side about 3 minutes or so on medium heat.  You don't want them to be rock hard (they won't get brown spots like regular tortillas), but not super soft either. Put on a plate and cover with the same damp paper towel until ready to assemble.

5.  Layer the tortilla with a tablespoon of the chicken and then a tablespoon of mango.   Top with a teaspoon of plain yogurt if desired.
